The nutrients in amaranth can offer significant health benefits as a part of a healthy diet. It's a source of vitamin C, which is vital to the body's healing process because it helps process iron, form blood vessels, repair muscle tissue, and maintain collagen. This in particular makes it a great boost to the anti-ageing regime, after all, prevention is better than cure!

Or you can grow the actual plant in full which will take a lot longer, but will eventually give you an abundance of never ending healthy goodness to be used as a baby leaf in salads or cooked exactly like spinach (it tastes very similar too!).
